
Marinate sirloin steak on olive oil, soy sauce, salt and pepper over night. Turn once in the morning.
Dressing: 1 c dry red wine
1-2 Tbsp finely diced onion or shallot
2 tsp parsley
2 tsp thyme
Cook in saucepan til reduced. Add salt and pepper to taste. Whisk in 1 Tbsp red wine vinegar and 1/4 c olive oil. Remove from heat and set aside.
Add 1 Tbsp canola oil to cast iron skillet. When oil smokes, add steaks. Salt and pepper both sides. Cook 3 minutes on each side for medium-rare. Remove and rest on cutting board for 5 min.
Warm vinaigrette back up. In a bowl, add spinach and whatever toppings you like ie. tomatoes, mushrooms, etc. Add dressing and toss. Optional: add croutons and toss. Put salad on plate. Top with sliced steak and a drizzle of more dressing. Enjoy!!
